Serious Cooking Lull

Lately I have been in a SERIOUS funk with meal ideas.  I just can't find anything I like to cook.  I am tired of the same, old, easy, quick meals.  I need new ideas.  So this post is a desperate call for people to submit to me their ideas for quick easy meals.  Anything you like to make for dinner is welcome.  PLEASE HELP!  My starving family will thank you!

Here's a link to my favorite spaghetti & meatball recipe. It's really good! Just to let you know I use really low fat ground beef instead of turkey. Hope you enjoy!

I'm a friend of MaryRuth's in Spokane, WA. I have several I'd love to share. I have really picky eaters (boys 7-3), and they manage to choke it down.

Chicken Enchilidas:

2-3 chicken breasts;cooked, cubed
16 oz. sour cream
1 sm can green chilies (we omit)
10 flour (or corn) tortillas
1/2 block cheddar cheese, shredded

Mix sour cream, soup, chilies & 1/2cheese. Take 3/4 of mixture and add chicken. Set aside the other 1/4 of mixture to top. Drop 1/3 cup of chicken mixture on tortilla and roll up. Fill 9x 13 baking dish with rolled up tortillas and top with the plain sauce, then the remaining cheddar cheese. Cover and bake at 350 for 25-30 minutes. Take cover off and bake another 5-10 minutes, or until cheese is melted. Serve with Fiesta Rice.


Fiesta Rice:

1 can Campbell's chicken broth
1/2 cup water
1/2 cup salsa (or red sauce)
2 cups Minute Rice, uncooked

In saucepan, bring first 3 ingredients to a boil. Add Minute Rice. Cover and remove from heat. Let stand for at least 5 minutes.

It's really delicious and I hope you like it. I have a couple more dishes to share if you want to. BTW, your blog is very enjoyable and keep up the great work.

Only 3 items and adults and kids love it!

A layer of corn chips in a casaroll dish sprayed with pam.
Cover corn chips with chili beans or black beans or pinto, whatever you like)
Cover beans with shredded cheese.
Add few drops of water to mositen.

Bake at 350 for 20 minutes

i love catalina chicken.
4 chicken breasts.
1/2 bottle of catalina chicken,
1/2 bottle of aprocot jam. and a
can of drainded pineapple.
mix everything together and pour over chicken and bake at 350 for 45 minutes.
I serve it over rice
Really easy.Really Yummy.Don't know if xander would like it.

i also like Baked Potato Soup.
Boil potato's (as many as you think you'll eat)
keep the water with it and add a cube of velveta cheese. a tub of sour cream and some bacon. I also add carrots and brocolli but you don't have too.. i can't say it's low fat but it's so so good.

I also like fried rice and Mexican chicken bake.and Bronco beans and sweet and sour meatballs. and porcipine meatballs.all of which you have recepe's for but maybe forgot how good they were. I also like dad's french fries maybe he'll come over and make them for you. Maybe he'll make them for me. they are so so good and nobody makes them quite like he does. I don't know how he does it.
I like hambergers that are mixed with meatloaf ingredents then grilled. they're way good.

Wally's sister told me his mom use to fix hot dog casserole which is mashed potatoe's on top of hotdogs. Yuck but maybe xander would like it.

I am always fond of cream cheese chicken and lasagna and other things that when I make, I double an freeze half. Then I have a free meal another day that is oh so yummy and takes no effort.
